Makes 1 mug cake

Chocolate cake for one in just a few minutes thanks to nifty use of the microwave. Add extra toppings, if you like – ice cream, strawberries, raspberries, sprinkles, chocolate flakes and wafers all work well.

Ingredients

  • 2 tbsp soft unsalted butter
  • 1 tbsp light brown sugar
  • 2 tbsp caster sugar
  • 4 tbsp self-raising flour
  • 1 tbsp cocoa powder
  • 1 tsp Cacao Bliss powder
  • 1 egg yolk
  • ½ tsp vanilla extract
  • Handful of chocolate chips

Method

  1. Put the butter into a large, microwave-safe mug. Microwave for 10–20 seconds, or until melted.
  2. Once melted, use a fork to stir in the brown sugar, caster sugar, self-raising flour, cocoa powder, and Cacao Bliss powder. Mix until well combined and smooth.
  3. Add the egg yolk and vanilla extract, then stir again until fully incorporated. Microwave for 30 seconds.
  4. Carefully remove the mug from the microwave (it may be hot). Sprinkle the chocolate chips on top and gently press them into the mixture using the handle of a teaspoon.
  5. Microwave for a further 30–40 seconds until the cake is set but still slightly gooey in the center.
  6. Let the cake cool for about 15 minutes before serving.
  7. Enjoy on its own or with toppings like a scoop of ice cream, sprinkles, a chocolate flake, or fresh strawberries. 🍫🍓
