Ingredients

For the Mango-Passionfruit Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup (180ml) mango purée (fresh or canned)
  • ¼ cup (60ml) passionfruit juice (fresh or bottled)
  • ½ cup (120ml) whole milk

For the Passionfruit Curd Filling:

  • ½ cup (120ml) passionfruit juice
  • ½ cup (100g) granulated sugar
  • 3 large egg yolks
  • 3 tablespoons unsalted butter

For the Mango Buttercream Frosting:

  • 1 cup (226g) unsalted butter, softened
  • 3 ½ cups (420g) powdered sugar
  • ½ cup (120ml) mango purée
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (as needed)

For Decoration:

  • Fresh mango slices
  • Passionfruit pulp (for a beautiful drizzle)
  • Edible flowers or toasted coconut flakes (optional)

Instructions

Make the Mango-Passionfruit Cake:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla.
  5. Mix in mango purée and passionfruit juice.
  6. Alternately add flour mixture and milk, mixing until just combined.
  7. Divide batter evenly into cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Cool in pans for 10 minutes, then transfer to a wire rack.

Make the Passionfruit Curd Filling:

  1. In a saucepan over medium heat, whisk together passionfruit juice, sugar, and egg yolks.
  2. Stir constantly until the mixture thickens (about 5-7 minutes).
  3. Remove from heat and stir in butter. Let cool completely.

Make the Mango Buttercream Frosting:

  1. Beat butter until creamy. Gradually add powdered sugar.
  2. Mix in mango purée and vanilla, beating until smooth.
  3. Add heavy cream as needed for a silky consistency.

Assemble the Cake:

  1. Place one cake layer on a serving plate and spread a generous layer of passionfruit curd.
  2. Add the second cake layer and frost the entire cake with mango buttercream.
  3. Smooth out the frosting for a clean finish.

  • Drizzle fresh passionfruit pulp over the top for a bold, exotic look.
