Ingredients
For the Mango-Passionfruit Cake:

- 3 large egg yolks

- 1 cup (226g) unsalted butter, softened
- 3 ½ cups (420g) powdered sugar
- ½ cup (120ml) mango purée
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream (as needed)
For Decoration:
- Fresh mango slices
- Passionfruit pulp (for a beautiful drizzle)
- Edible flowers or toasted coconut flakes (optional)
Instructions
Make the Mango-Passionfruit Cake:
- Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each. Stir in vanilla.
- Mix in mango purée and passionfruit juice.
- Alternately add flour mixture and milk, mixing until just combined.
- Divide batter evenly into cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack.
Make the Passionfruit Curd Filling:
- In a saucepan over medium heat, whisk together passionfruit juice, sugar, and egg yolks.

- Beat butter until creamy. Gradually add powdered sugar.

Assemble the Cake:
