Makes 1 mug cake
Chocolate cake for one in just a few minutes thanks to nifty use of the microwave. Add extra toppings, if you like – ice cream, strawberries, raspberries, sprinkles, chocolate flakes and wafers all work well.
Ingredients
- 2 tbsp soft unsalted butter
- 1 tbsp light brown sugar
- 2 tbsp caster sugar
- 4 tbsp self-raising flour
- 1 tbsp cocoa powder
- 1 tsp Cacao Bliss powder
- 1 egg yolk
- ½ tsp vanilla extract
- Handful of chocolate chips
Method
- Put the butter into a large, microwave-safe mug. Microwave for 10–20 seconds, or until melted.
- Once melted, use a fork to stir in the brown sugar, caster sugar, self-raising flour, cocoa powder, and Cacao Bliss powder. Mix until well combined and smooth.
- Add the egg yolk and vanilla extract, then stir again until fully incorporated. Microwave for 30 seconds.
- Carefully remove the mug from the microwave (it may be hot). Sprinkle the chocolate chips on top and gently press them into the mixture using the handle of a teaspoon.
- Microwave for a further 30–40 seconds until the cake is set but still slightly gooey in the center.
- Let the cake cool for about 15 minutes before serving.
- Enjoy on its own or with toppings like a scoop of ice cream, sprinkles, a chocolate flake, or fresh strawberries. 🍫🍓
